A Diabetes recipe for a snack or light meal, something a bit tasty.?


I get a pkg of stir fry veggies from the frozen food section, and some of the grilled chicken strips from the meat section (the ones that you can use in quesadillas) – and do a quick stir fry of veggies and chicken with soy sauce. It is yummy, filling and totally appropriate for diabetics.

Angel food cake with strawberries (sweetened with Splenda) and cool whip for dessert is wonderful.

Cactus recipes? (diabetes)?

I am eating raw chopped nopal in my salad; also using it in raw kale shakes. Anybody have any good prickly pear recipes cooked or raw?

1/2 lb Fava beans, washed well and drained
1/2 cup Olive Oil
1/2 Onion cut into large pieces
1 and 1/2 quarts of water
2 cloves of garlic
4 to 5 cactus pads
1/2 diced onion

Combine the Favas, oil, onion and two cloves garlic. Cook in a covered pot bringing to a slow boil and continue to cook until the Favas are soft and the liquid is thick. Do not salt. This takes about 2 and 1/2 hours. Stir frequently. Meanwhile clean the cactus pads and cut them into 1/4 inch cubves. Boil them with salt garlic and onion for about 15 minutes. Before serving add the cactus to the soup and stir well. Makes approximately 6 servings. Baby Lima or Haba beans can be substituted for the Fava beans.

Cactus and Bean Salad

1 16 oz. can of drained kidney, wax, garbanzo and green beans
1 cup of chopped bell pepper
1/2 cup chopped onion
1/2 lb of fresh cleaned and diced cactus

Mix all ingredients and salt and pepper to taste, marinate overnight in refridgerator to blend flavors. Makes about 8 servings.

Hey, anyone have any source for recipes healthy for Type 2 Diabetes?

…that don’t taste like crap?

I’m now to the point that I really don’t need medication for my type 2. I’ve drank little to no alcohol in the past year and started a healthier diet along with strength training. Its now become a hobby. At 44 I think I’m doing pretty good fitness wise.

I’d like to find some websites that have some recipes that don’t taste bland or like hospital food.

I just take my favorite foods and make them my way. Like I make my own marinara sauce with lots of veggies the way I like it, and put it over Barilla Plus pasta – man, my blood sugar does not budge from that stuff! Miracle food. I make pizza using this whole wheat lavosh bread from Trader Joe’s (I like a thin crust), but top it like a regular pizza. I use brown rice any time I want rice, and now that they make it in microwaveable packs it’s really handy. I use whole wheat tortillas for burritos, or make taco salads with tortilla chips because corn chips are low-glycemic.

I agree about the blandness in a lot of diabetes recipes sites. They try to hit all the bases – low fat, low sodium, yadda yadda yadda. Not all of us are losing weight and may not need low-fat. Not all of us have high blood pressure and may not need low-sodium. Etc.

Some good diabetes-friendly recipes?

I’ve been recently diagnosed, and I HATE the way artificial sweetners like Splenda, etc. taste. Any recipe suggestions?

I was wondering if any one out there has recipes for anything deserts, entrees, appetizers, ect … for a person with both sylliac ( sorry about the spelling error) and type two diabetes. any thing would be greatly appreciated
